Prep Time: 20 Minutes
Servings: 6
Ingredients
1 qt. (7-lb.) fresh watermelon; peeled and small diced
1 can (15-oz.) O Organics™ black beans; rinsed and drained
1 medium red onion peeled and small diced
1 cucumber peeled, seeds removed and small diced
¼ cup Cilantro rough chopped
2 tablespoon o organics extra virgin olive oil
1 fresh lime, juice of
Pinch Sea salt, to taste
Pinch Fresh ground black pepper
A dash of your favorite Hot Sauce as needed
The Snack Artist™ Tortilla Chips
Directions
In a large bowl, combine prepared watermelon, black beans, onions, cucumber, cilantro, extra virgin olive oil, hot sauce and lime juice.
Stir ingredients together, taste for seasoning and spice; adjust as needed.
Transfer salsa to serving bowl, serve with tortilla chips.
