Remember – you can always add a protein component like lean chicken – and pile on an array of colorful veggies depending on what you like. Now naturally, you can also make your own pizza dough and pesto sauce if you like, yet the purpose of using store bought ingredients is so you can always have them on hand to whip up a delicious and nutritious grilled pizza anytime the hungry party girl in you craves a healthy and delicious party food or snack.

Prep time: 20 minutes

Ingredients:

  • 1-10 oz. can refrigerated All Ready Pizza Crust (You can find this in the refrigerated section by the eggs, butter, etc).
  • 1/3 cup purchased pesto sauce (You can also use home made if you prefer and can find the Party Girl Diet’s Pesto Recipe here.)
  • Tomato Sauce (Jarred is fine) Enough to spread thinly on bottom of pizza dough
  • 2 Italian plum tomatoes, sliced
  • Bunch fresh basil, roughly torn in large pieces
  • 1 fresh red bell pepper – cut into thin strips
  • Dozen pitted greek olives, sliced
  • 1/4 cup chopped red onion (optional yet tasty)
  • 6 oz. (1 1/2 cups) crumbled fat free or low fat Feta cheese or substitute with shredded part-skim mozzarella cheese – fresh mozzarella is also a good choice as it melts extremely well and spreads nicely.  Use half dollar sized slices of fresh mozzarella instead of shredding.

Here’s The Party Girl Diet’s “how to grill pizza” guide in 3 easy steps:

STEP 1 – Heat grill – Lightly grease 12-inch pizza pan or 13X9 inch pan. Unroll dough; place in greased pan – starting at center, press out with hands.

STEP 2 – When ready to grill, place pan on gas grill over medium heat or on a charcoal grill 4 to 6 inches from medium coals. Cover grill; cook 5 minutes or until crust just begins to brown.

STEP 3 – Remove crust from grill; spread pesto (or pizza sauce of choice) evenly over partially baked crust. Arrange vegetables and desired toppings of choice over pesto, sprinkle with cheese.

Return pizza to grill – cover grill – and cook 10 minutes or until crust is a deep golden brown and cheese is melted.
