Now while using sweet potatoes does offer a nice balance of spicy and sweet. and a bit more nutritional power than russet (white) baking potatoes – you can also make this Chipotle French Fry Recipe with regular potatoes.
Baked Chipotle Sweet Potato Fries
Makes 6 servings:
Pre-heat over to 400°F
Ingredients:
- 6 sweet potatoes peeled (optional) and cut into 1/4″ fries – the thinner the fry the crispier it will come out!
- Approximately 2-3 Tbsp (EVOO) olive oil (Or enough to lightly coat fries)
- Fresh cilantro, coarsely chopped (optional)
- Dash “Smoky Paprika” (Or regular Paprika)
- Dash course sea salt
- Few cranks of fresh cracked black pepper
- Dash or 2 of chipotle powder (Use cayenne (red) pepper in a pinch and you don’t have chipotle power)
- Dash garlic powder (Not garlic salt)
Preheat oven to 425°
Method:
- Peel the potatoes lengthwise, (Peeling is optional and fries will have more fiber with skin on). For a gourmet touch, leave a patch of the skin on each end of the potatoes.
- Uniformly cut each potato into very thin fries lengthwise about a quarter-inch thick.
- In a medium bowl, toss sweet potatoes fries gently with olive oil, salt, pepper, garlic powder and chipotle chile powder.
- Spread potatoes evenly on a non-stick baking sheet so potatoes are not touching each other so they get crisp.
- Bake for approximately 15 minutes.
- Turn and bake an additional 10-15 minutes – or until done to desired crispiness.
- Sprinkle with fresh chopped cilantro and a dash of course sea salt.
- 1/2 Cup Fat Free, plain Greek Style Yogurt
- 1/8 tsp garlic powder
- 1/8 tsp Chili Powder
- Dash Cayenne Pepper (Use more or less depending on how spicy you want it)
- Dash Sea Salt
- Few cranks of fresh cracked black pepper
- Juice of 1/2 a fresh lime
- 1 scallion – chopped (white and green portions – reserve some to sprinkle on top)
- Few sprigs fresh Cilantro – coarsely chopped
