Party Girl Diet inspired ‘Super-Berry” Crepes

Made with fat free Greek yogurt – which is a sexy abs food, and fresh strawberries & assorted berries – which are packed with antioxidants, the following Party Girl Diet inspired Strawberry Crepes are a super easy recipe you’ll turn to when you’re hungry for healthy party food you can enjoy guilt free on a diet.

Party Girl Diet Tip:  Have a pitcher of sparkling Virgin Pomegranate Sangria ready to serve (Video below), and have all the ingredients on hand to make fresh squeezed orange juice Mimosas, spicy Bloody Marys, and specialty coffee drinks.

 

Ingredients for the crepes (you can also buy them pre-made if you’re pressed for time):

  • Vegetable oil for the pan
  • 6 eggs
  • 1 2/3 cups milk
  • 1 teaspoon sugar
  • 2 cups whole wheat flour

Ingredients for the crepe filling:

  • 1 lb strawberries (select organic strawberries whenever possible), sliced or chopped
  • 1/2 pint blueberries
  • 1/2 pint raspberries
  • 12 ounces Fat Free Greek Yogurt (3 single-serving containers) Choose Strawberry, blueberry, honey flavored or plain fat free Greek yogurt
  • Powdered confectionary sugar, for decoration (optional)

To make the filling: 

In a large bowl, combine the Greek yogurt and the berries together – gently folding the berries into the yogurt with a spatula until coated.  Reserve some of the fresh, assorted berries to top the crepes with for presentation.

To make the crepes:

  • In a large bowl, beat eggs together.
  • Whisk in the milk.
  • Add sugar; and whisk in about 1/2 cup flour at a time, making sure you get whisk out the lumps as you go.
  • Keep whisking until all the consistency of the batter is slightly thinner than pancake batter and lump free. (add more milk if too thick; add more flour if too thin).
  • Heat a large skillet over medium heat.
  • Coat the bottom of the skillet with about a1/2-teaspoon (or more as necessary) of vegetable oil.
  • Pour in approximately a 1/2-cup of batter into the skillet and tilt the pan to roll the batter all the way to the edges to form a paper-thin circle.
  • Cook until small bubbles begin to form on top of the crepe or until the edges start to curl up slightly (about 2 minutes).
  • Flip over and cook the other side until slightly golden brown spots form (about 2 more minutes). Repeat until all batter is used. (Note:  you will have more crêpes than you need for this recipe).

On a flat working surface, top crepe rounds with a few heaping tablespoons of yogurt-berry filling. Roll up crepes, and if you wish, pre-plate them by placing 2 rolled up crepes on each plate.  Decorate with reserved berries, and sprinkle with powdered sugar (optional).
