Official Sexy Abs Diet Signature Red Thai Curry Recipe:

Ingredients to make 4 servings:

1 – 14 oz. can Light Coconut Milk (Trader Joe’s sells it)

3 Tbs. Red Thai Curry Paste (Thai Kitchen makes a good one)

2 Tablespoons of olive oil

3 Cloves of garlic – chopped

1 pound of Chicken tenders or chicken breast meat cut into 1 inch bite-size pieces

1 red pepper – julienned (cut into thin strips)

1 handful of fresh basil leaves – cut into thin strips for garnishing

1 tsp. cayenne pepper (or more to your taste)

1. tsp. cumin

1.tsp.  turmeric

Fresh grated black pepper and sea salt to taste.

Step 1:  In a large deep sided non-stick skillet or pan combined 1 Tbs. of the olive oil, the chicken pieces, and all of the spices.  Stir to coat chicken with spices well.  Cook over medium heat, stirring frequently until chicken is cooked through and browned to a golden color.

Step 2:  Remove chicken from pan and set aside.  In same pan, add remaining Tbs. of olive oil, chopped garlic, and red pepper slices.  Cook over medium heat for just a few minutes until garlic is softened but not browned.

Step 3.  Add the cooked chicken back into the pan, the can of Light Coconut Milk, and the 3 Tbs. of Red Thai Curry Paste.  Stir well and often over lower heat for a few minutes.   Mixture will gradually thicken up.

Serve in bowls with shredded fresh basil, fresh black pepper, and a dash of sea salt sprinkled on top.  Enjoy!

PS:  If you want to add a starch to this dish you can serve it over rice or quinoa.
