Search for “Oysters Rockefeller” on the internet and you will find there are many different variations of Oysters Rockefeller recipes to choose from, some calling for the use of rich cream, and all listing fattening butter as a main ingredient.

A bite of history on the origin of the Oysters Rockefeller Recipe.  While it is believed the original Oysters Rockefeller recipe remains a secret, the original Oyster Rockefeller recipe is said to have first been made with snails, and it originated out of New Orleans in 1840 by Antoine Alciatore.  Oysters Rockefeller gets its name from “its intense, rich flavor,” hence the name Oysters “Rockefeller” was named after John D. While many enjoy oysters in the raw, the healthiest way to eat them is baked or grilled.  Here’s the Party Girl Diet Skinny Oysters Rockefeller Recipe, which contains spinach, garlic, and olive oil – 3 of  The Party Girl Diet book’s “Top 10 Foods for Health and Longevity” ~ bon appetite!

  • 2 dozen oysters, on the half shell (shells cleaned/scrubbed, and oysters pried opened with oyster knife or screwdriver)
  • 3 cups chopped fresh spinach (can also use thawed frozen spinach, squeeze out all liquid)
  • 2 – 3 tablespoons olive oil plus 1 tablespoon butter (original recipes call for 4 tablespoons unsalted butter)
  • Plus 2 additional tablespoons of olive oil for breadcrumb mixture
  • 2 – 3 garlic cloves, minced
  • 1/4  cup grated Parmesan
  • 3 tablespoons chopped cilantro which is high in anti-oxidants
  • 1/3 cup Panko bread crumbs
  • Dash Sea Salt (optional if you are watching your salt) and a healthy amount of fresh cracked black pepper, to taste
  • Fresh lemon wedges, for garnish
  • 1/2 teaspoon *Party Girl Diet’s Sexy Abs Diet Spice Mix (see recipe below)


  1. Melt butter in a skillet with 2 tablespoons olive oil. Saute the garlic for approximately 2 minutes. (Be sure not to overcook as the garlic will take on a bitter taste).
  2. Place the bread crumbs in a mixing bowl and add half the garlic butter, set aside.
  3. To the remaining garlic butter in the skillet, add chopped spinach, cook for about 2 or 3 minutes until the spinach wilts.
  4. Season with sea salt and fresh cracked black pepper (original recipes call for splash of hot sauce – which we have omitted).
  5. Allow the mixture to cook down for a few minutes.
  6. Add olive oil, parmesan cheese, Party Girl Diet’s Sexy Abs Spice Mix, and chopped parsley to bread crumb mixture, season with sea salt and fresh cracked black pepper to taste.
  7. Spoon 1 large spoonful of the spinach mixture on top of each oyster
  8. Finish each oyster with spinach mixture by topping it with a spoonful of the bread crumb mixture.

Grill Method:  Set BBQ grill to medium/high heat.  Place oysters with filling side up on grill rack.  Grill until cooked throughly and bubbly, about 4 – 6 minutes.

If choosing baking method:  Bake in a preheated 450 degree F oven for 10 to 15 minutes until golden and bubbly.

Garnish/serve with fresh lemon wedges and sprig of cilantro (optional)

*Combine the following ingredients together and store in a airtight container with a lid so you can have The Party Girl Diet’s Sexy Abs Diet Spice Mix on hand anytime you want to add a healthy spice boost to your dishes or create a “spice rub” for chicken and fish:

  • *1 tablespoon cayenne pepper
  • *1 tablespoon garlic powder
  • *2 teaspoons ground cumin (Or Turmeric)
  • 1 tablespoon cracked black pepper
  • dash sea salt
  • 1 tablespoon dry mustard
